Homemade Marshmallows



Once you make homemade marshmallows you will never buy store bought again unless you are on a hurry. This are so simple and would make great gifts for Christmas for the neighbors or friends. They will disappear fast! And they can last up to a week in a air tight container. I followed the instructions from Happy Food Healthy Life.

The ingredients are:

  • 3 1/2 packets of gelatin
  • 2 cups of sugar
  • 1/2 cup of LIGHT corn syrup
  • 1 T of vanilla 
  • 1 cups pf water divided in 1/2 cups
  • 1/4 tsp salt
  • 2 egg whites
  • powder sugar
Directions:
In a bog bowl mix the gelatin and COLD water, set aside. In a saucepan, heat over medium heat the syrup, the sugar, the salt and the other 1/2 cup of water until it comes to a boil, then on low keep cooking for about 12 minutes. Meanwhile, fluff up the egg whites. After the syrup mix is done, pour in the gelatin bowl and with a mixer mix until it becomes white and stiff, it takes about 10 minutes of so. After you are done, add the vanilla and mix. Last, incorporate the egg whites slowly. Dust a 13 x 9 Pyrex pan and incorporate the mix, it will be sticky so you can spray Pam on the spatula to come out easy. Spread evenly and then dust more powder sugar. You can also dust a mixture of cornstarch and sugar with a 2:1 sugar to cornstarch ratio, but I personally prefer the sugar alone. Let set for at least 6 hours. Then you can cut up into shapes using a cookie cutter or you can cut stripes and then little squares, just like regular marshmallows. These are THE fluffiest marshmallows!
