Coconut Macaroons

These are the simplest cookies we have ever made. My youngest son loves coconut and he has been wanting to cook these for Family Home Evening. There are several ways of making them. Sometimes we use sweetened condensed milk, but this time we used egg whites and they turned out great too.
First, beat 4 egg whites


Then, add 4 1/2 cups of coconut, 1/4 cup of sugar and 1 tsp of vanilla and mix well into a dough. You can also add almond flavor.


Scoop the dough into a parchment paper lined baking sheet



My son chose to sprinkle them with funfetti. Bake them at a 325 oven for 25 minutes or until golden. Let cool completely.
