Speaking about Quince, we eat this a lot in Uruguay. If you have not tried Quince Paste (Dulce de Membrillo) we challenge you to try it... It looks like this:

We eat it with bread and cheese together. It is called "Martin Fierro." Yes, there is some history behind the name and he was a person in a poem ;-)
Would you like a recipe to try it?

Chocolate Flan

Good morning. I have received some great comments and questions about Uruguayan food. Thank you so much, you guys made my day. I received an e-mail by a reader and she wanted to know how to make chocolate flan. Actually, this is something we do not cook at my house, we usually make regular flan or dulce de leche flan (OUT OF THIS WORLD!!!). We have also tried the Mexican version of "chocoflan" which is chocolate cake on the bottom with flan on top, but my family did not care for it very much. I liked it though.
I used this recipe for my chocolate flan. It was good.

Recipe adapted from: My Colombian Recipes
Ingredients:
For the caramel:
  • 1 cup of sugar
  • 1/2 cup of water
For the Flan:
  • 5 whole eggs
  • 2 egg yolks
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1 cup of heavy cream
  • 1 1/2 tablespoons of sugar
  • 3/4 cup of unsweetened cocoa powder
  • powder sugar for dusting
First, assemble 6 ramekins in a Pyrex casserole dish. In a saucepan, combine sugar and water, mix once and let it cook until it bubbles and starts looking brown. Immediately pour this over the ramekins. In a blender, blend all of the flan ingredients and pour on top of the caramel. Put hot water around the ramekins (but not all the way to the top) and cover with aluminum foil. Bake @ 325 for 50 minutes or until a knife inserted comes out clean. Let cool and serve on a plate and garnish with powder sugar and berries.

Enjoy!
